Bruschetta is one of the most popular of recent trending foods in the world. It is appreciated by millions every day. It is easy, it is fast, it tastes yummy. Bruschetta is something which I’ve loved my whole life. They’re nice and they look fantastic.

The ingredients needed to make Bruschetta:
  1. Get Crusty bread, sliced and on griddle to toast, or lightly toast in a regular toaster - 3 slices per person
  2. Take Sweet cherry tomatoes - 2 or 3 per bread slice, depending on size
  3. Make ready Basil - 3 leaves per slice of bread
  4. Take Evoo, s&p
  5. Prepare Garlic, sliced
  6. Take Oregano
  7. Take 1 small red chili sliced (can use dried)
  8. Take Ricotta cheese w pinch s&p (cottage cheese works too) - about a tablespoon per bread slice
  9. Take Mid sized bocconcini - a little less than the ricotta or cottage cheese you used
  10. Get Sundried tomatoes - about 100g finelychopped
  11. Prepare Red wine vinegar 2 tblsp

To keep the bread from getting soggy, make sure it is well toasted, and use a slotted spoon to serve, if desired. At our house, we fight for those last juices–to sop them up with a crusty baguette is Heaven! DIRECTIONS In a medium mixing bowl, add the tomatoes, garlic, basil, vinegar, olive oil, cheese, salt and pepper. Slice the bread into individual pieces and spoon the mixture on top.

Steps to make Bruschetta:
  1. Tomatoes, evoo, s&p, sliced garlic, oregano, chili. Mix and either oven for 3 mins at 220C or put on stove, lid on, medium heat for 15 mins, then lid off for 5 to reduce. Shake.
  2. Mash ricotta or cottage cheese, s&p and bocconcini with fork
  3. Chop finely, sundried tomatoes with vinegar and olive oil, until a moist paste.
  4. Rub toasted bread w garlic. Sprinkle with evoo. Add sundried paste then cheese mix, then basil, tomato and evoo.

DIRECTIONS In a medium mixing bowl, add the tomatoes, garlic, basil, vinegar, olive oil, cheese, salt and pepper. Slice the bread into individual pieces and spoon the mixture on top. There are few things I love more than bruschetta. The grilled, buttery bread.the beautiful tomatoes.the scrumptious basil. A perfect combination, and a perfect snack.
