At our house, we fight for those last juices–to sop them up with a crusty baguette is Heaven! Place bread slices on a broiler pan. Char bread on each side under hot broiler, keep an eye on it! Rub toasts with cracked garlic and drizzle with oil.

Steps to make Bruschetta:
  1. Finely chop all the vegetables.
  2. Now in a big bowl, transfer all veggies, olive oil, oregano, basil, black pepper and half cup of cheese and mix well. Cover and keep in refrigerator for at least 2-4 hours so the flavour of herbs is infused well in veggies.
  3. Cut the baguette in slices and dry toast it on a skillet or in oven. (You can prepare it in advance too.)
  4. At the time of serving, add salt in veggie mix. Spread butter on toasted baguette slices.
  5. Now put spoonful of prepared topping on buttered slice. Sprinkle some cheese and chilli flakes
  6. Bake it or microwave it for 2 minutes and serve. Can add fresh basil leaves.
