DIRECTIONS In a medium mixing bowl, add the tomatoes, garlic, basil, vinegar, olive oil, cheese, salt and pepper. Slice the bread into individual pieces and spoon the mixture on top. There are few things I love more than bruschetta.

Steps to make Bruschetta:
  1. Preheat oven to 200°C top-heat.
  2. Sprinkle the breadslices with the oliveoil on both sides and put on a backing sheet covered with some non-stick paper. Put the bread into the oven for about 2 minutes on each side or untill its golden brown and crispy.
  3. Mix all the ingredience for the topping in a small bowl and season it with salt and freshly grinded black pepper to taste.
  4. Take the bread out of the oven and put the topping on top. Serve immediately. Enjoy!

Slice the bread into individual pieces and spoon the mixture on top. There are few things I love more than bruschetta. The grilled, buttery bread.the beautiful tomatoes.the scrumptious basil. A perfect combination, and a perfect snack. Unless you eat twelve pieces like I do.and then it's more like a meal.
