  1. Take 1 slow cooker liner for crockpot (makes clean up easy)
  2. Get 1 4 lb pork roast (shoulder or rump roast)
  3. Make ready 1 tsp garlic
  4. Get 1 tsp salt

  8. Prepare 2 medium bay leaves

  10. Get 1 quart chicken broth
  11. Get 2 stalks of celery (use the top with the leaves)
  12. Take 1 medium onion (minced)

I've never liked Pot Roast but this was delicious. I skipped all the marinate ingredients and bought "Mojo" sauce. (I live in Miami it's a standard Hispanic marinate sold everywhere here). This Cuban pulled pork is made with tender shredded pork, marinated in garlic, cumin, grapefruit and lime and cooked in the pressure cooker. This is very similar to my Slow Cooker Pernil, in fact if you don't have an Instant Pot (btw you should!) and Instant Pot Pork Carnitas (Mexican Pulled Pork).

Steps to make Cuban Pot Roast (similar to Mexican Carnitas):
  1. place slow cooker liner in crockpot.
  2. mix all the dry spices in the food processor … if you don't have a food processor then mix with a wisk well.
  3. mix rub all over roast and let rest for almost 1 hr.
  4. put the bay leaves and 2 cup of chicken broth in the bottom of crockpot.
  5. place roast fat side up in crockpot. If there isn't enough fat I lay thick bacon over the 'up' portion of the roast. after you put leftover rub on the roast.
  6. let roast cook 5 hours and turn.
  7. after 10 hours on low take roast out of cooker.
  8. remove bay leaves, when you take it out to shred.
  9. shred roast using forks and put back in cooker.

This Cuban pulled pork is made with tender shredded pork, marinated in garlic, cumin, grapefruit and lime and cooked in the pressure cooker. This is very similar to my Slow Cooker Pernil, in fact if you don't have an Instant Pot (btw you should!) and Instant Pot Pork Carnitas (Mexican Pulled Pork).
