  1. Prepare 2 tbsp olive oil
  2. Take 2 Shallots, diced
  3. Make ready 3 cloves garlic, minced
  4. Take 1 lb ground beef
  5. Prepare 1/2 teaspoon kosher salt
  6. Make ready 1 tsp chili powder
  7. Prepare 1 tsp ground cumin
  8. Make ready 1 can (10 oz) field peas rinsed and drained
  9. Make ready 1 can (15 oz) diced tomatoes and Serrano peppers, including juice
  10. Make ready 1 tsp grated ginger
  11. Get 4 slices cooked bacon, chopped
  12. Prepare 1 jalapeño, diced
  13. Get 2 Brussels sprouts, halved and fine sliced
  14. Take 1 red bell pepper, diced
  15. Get Grated cheddar cheese, topping
  16. Prepare Sour cream, garnish
  17. Prepare 1 cup elbow macaroni

Used petite diced tomatoes in place of rotel (all I had on hand) added about two tablespoons chopped peppers and served cheese on side just because hubby doesn't really like it cooked in. My Chili Mac is made with a homemade Chili Powder. What's known as "Chili Powder" in the US is actually a spice mix, not just pure chili, and it varies from brand to brand. It's not sold here in Australia, though I've always got a stash because I stock up when I travel to the States.

Steps to make Soulé Chili Mac:
  1. For the macaroni, bring 2 cups of water to a boil. Add macaroni and stir. Cover until al dente (approx 6min).
  2. Prep the ingredients.
  3. In a 10-inch skillet over medium heat, heat oil 30 seconds. Add onions and cook, stirring occasionally 2 minutes. Stir in garlic and cook an additional 1 minute.
  4. Add ground beef to skillet and break up with a spatula. Stir occasionally and cook until no longer pink, about 8 minutes.
  5. Add salt, chili powder, and cumin; stir another 10 seconds. Add in ginger and stir.
  6. Add in field peas, Cajun pinto beans and bacon. Stir and let cook about a minute.
  7. Next, add in jalapeños, Brussels sprouts and red peppers, stir well into mixture.
  8. Add tomatoes and then bring mixture to a boil over high heat. Once boiling, reduce the heat to a simmer on low heat and cook 10 minutes.
  9. Spoon chili into a bowl and enjoy hot.

What's known as "Chili Powder" in the US is actually a spice mix, not just pure chili, and it varies from brand to brand. It's not sold here in Australia, though I've always got a stash because I stock up when I travel to the States. A real chili-mac is not chili sitting onto of noodles or even mixed in with macaroni elbows. Real chili-mac is spicy beef sitting on a dollop of ketchup and a pile of pasta. Chili-Mac has been a part of my life as long as I can remember.
