  2. Use a wok or large saucepan and heat enough oil to coat the bottom. When the oil is just smoking, add the egg and swirl to form a thin omelette. Cook until just set, remove from the pan and thinly slice.
  3. Bring wok back on heat, and Stir-fry the chicken and prawns 2-3 minutes then add onion, and capsicum over high heat for 2-3 until the onion has softened a little then Add garlic and the paste, to draw out the aromatics
  4. Strain noodles and add to wok, with soy, fish sauce, sugar and juice of half of lime. Cook 2-4 minutes till noodles soften, then add eggs back in.
  5. Serve on plate with garnish of sprouts, coriander, peanuts and freshly squeezed remaining lime.
