  4. Truss chicken with cotton twine and wrap in plastic wrap, refrigerate overnight
  5. Roast in 325deg oven for approximately 1 1/4 hours, or until internal temp of 165deg F
  6. Remove from oven and cover loosely with foil to rest at least 15min before carving

In a small bowl mix oil vinegar and seasonings. Place chicken in large resealable plastic bag or glass dish. Pat the chicken thighs with a paper towel to remove any excess moisture. Season the skin on the top AND bottom of the chicken thighs heavily with Old Bay. Place the chicken on the grill, leaving room between them.
