  1. Take 3/4 pound yellow squash
  2. Get 1 small onion
  3. Get 1/2 teaspoon smoked paprika
  4. Get 4 ounces bacon
  5. Make ready 1 teaspoon kosher salt
  6. Get 1/3 teaspoon ground black pepper
Instructions to make Rustic Squash:
  1. Slice the onion thinly
  2. Slice the bacon and render the fat. When the fat is rendered, add the onion slices. Cut the squash like French fries. Add the squash to the skillet. Season with salt and pepper. Sauté for 7 minutes.
  3. Add the paprika. Sauté for 7 minutes more.
