  1. Get 1 Cup Arhar Dal/Toor Dal
  2. Take 1 cup Split Bengal Gram/ChanaDal
  3. Take 6 - 8 Green Chillies (depends on spiciness of the Chilli) -
  4. Take 1 Tsp Peppercorns
  5. Prepare 1 inch Ginger
  6. Prepare 1 Tbsp Cumin Seeds
  7. Prepare A handful Freshly grated Coconut -
  8. Get 2Tbsp Finely chopped Coriander & Curry Leaves -
  9. Get As per taste Salt -
  10. Prepare 1 Tbsp Lemon Juice
  11. Make ready 1 Tsp Eno/Baking Soda
  12. Prepare 1/2 Tsp Asafoetida -
  13. Prepare 1 Cup Rice Flour
  14. Get 2 Cups Water
  15. Make ready For Sweet Kadubu
  16. Get 1 Cup Freshly grated Coconut
  17. Take 0.5 Cup Jaggery/Jaggery Powder -/as per the required sweetness
  18. Prepare 1 Tbsp Rice flour
  19. Take 1 Tsp Cardamom Powder

Sweet kadubu is prepared using rice, jaggery and coconut. This is a no fermentation and instant breakfast item. Two versions of Kadubu are made, one is Sihi Kadubu means Sweet dumplings and other one is Kara Kadubu (spicy dumplings). Sweet Dumplings has coconut - jaggery as a filling and savoury dumplings has lentils, herbs and spices as its filling.

Steps to make Khara Kadubu, Sihi Kadubu (Savoury & Sweet Pudding/Dumplings):
  1. Wash and soak both the Lentils in water for 5-6 hours or overnight.
  2. Add Green Chillies, Peppercorns, Ginger, Cumin Seeds in a blender along with the soaked Lentils in batches and blend it coarsely. DO NOT ADD WATER.
  3. To the ground mixture, add finely chopped Coriander & Curry Leaves, Grated Coconut, Lemon Juice, Salt and mix well. Add Eno/Soda in the end & mix it. Stuffing for Savoury Kadubu is ready.
  4. Boil 2 cups of water, add a spoon of Oil & Salt into it. Add the Rice Flour into it, give it a mix, close the lid & turn off the flame. Let it cook in the hot steam for 5-10 minutes. Then knead it to a soft dough and make round balls out of it as shown.
  5. Roll them into small Poori-like discs. Fill the stuffing on one side of it and close it as shown in the video. Khara Kadubu, Sihi Kadubu (Savoury & Sweet Pudding/Dumplings)1. Make similar Kadubus and steam it in the steamer/Idli maker for 20minutes and enjoy Khara Kadubu with Coconut Chutney and Ghee.
  6. For the sweet Kadubu, add a cup of freshly grated Coconut in a Pan, Jaggery and Rice Flour. Give it a good mix until the Jaggery melts. Add Cardamom Powder & the stuffing is ready. Repeat the steps 4-6 and steam the sweet Kadubus. Enjoy it hot with Ghee.

Two versions of Kadubu are made, one is Sihi Kadubu means Sweet dumplings and other one is Kara Kadubu (spicy dumplings). Sweet Dumplings has coconut - jaggery as a filling and savoury dumplings has lentils, herbs and spices as its filling. Avi Kadubu is steamed and stuffed rice flour treats / snacks mostly prepared during festivals like nagara panchami, vinayaka chaturthi/ Ganesha festival. Sihi Kadubu has sweet fillings like jaggery - coconut or Til / sesame seeds and jaggery filling. Kara kadubu has spicy fillings like Urad dal and spices or chana dal and spices.
