  1. Make ready 1/2 box rotini pasta (I used whole wheat pasta)
  2. Get 1 tbsp olive oil, extra virgin
  3. Make ready 1 bunch kale chopped
  4. Make ready 1 cup fresh mushrooms chopped (I used mini bellas)
  5. Make ready 1 tbsp schallots finely diced
  6. Get 1/2 cup almonds chopped
  7. Prepare steak seasonning
  8. Prepare freshly ground black pepper
  9. Make ready 1 jar alfredo sauce (I used reduced fat classico brand)
Instructions to make Kale & mushrooms alfredo pasta:
  1. Cook pasta in boiling water as per directions on box
  2. Meanwhile, in a pan, heat olive oil at medium-high heat
  3. Add schallots & mushrooms in pan and cook for couple of minutes
  4. Add kale and cook for another couple of minutes
  5. Add almonds, steak seasonning, freshly ground pepper and mix well
  6. Reduce heat to low, add alfredo sauce, mix well, cover and set aside
  7. When pasta's cooked, drain but keep some of the cooking water
  8. Add pasta to sauce mix and stir well. If you feel sauce is not liquid enough or if sauce's missing, add some cooking water from pasta little by little
  9. Cover, remove from heat and let stand for five minutes before serving
  10. Rectify seasonning.
  11. Enjoy!
