I know you can get great tomatoes year round, but local summer tomatoes are just amazing. I especially love tomato salads—and my favorite is the Italian caprese, with fresh mozzarella and basil. I decided to twist this classic salad a bit and turn it into a bruschetta appetizer. My idea paid off, because this bruschetta is SO good.

Instructions to make Bruschetta Caprese:
  1. Cut the tomato and fresh mozzarella into even sized pieces and place in a medium sized bowl.
  2. Now Add 1 tbsp olive oil, black pepper powder, salt and rip the basil leaves into small pieces and add origan.
  3. Mix thoroughly and let sit for at least 15 minutes at room temperature to let the flavors marinate.
  4. For toast the bread slices :-add 2-3 tsp olive oil in a pan and add bread slices. Toast the bread slices until lightly golden brown both sides. (Use a non-stick pan for this, or you can toast them in the oven.)
  5. Now remove from the pan.Place in a plate.Add grated garlic every slice of bread. Top each slice with the marinated tomatoes and Mozzarella.
  6. Add a light drizzle of a bit more of the olive oil and add basil on top. Enjoy immediately while the bread is still slightly warm.

I decided to twist this classic salad a bit and turn it into a bruschetta appetizer. My idea paid off, because this bruschetta is SO good. The 'bruschetta caprese' is a typical Neapolitan starter which can be served with an aperitivo, as a hearty appetizer or even as a main vegetarian course. All the flavors you know and love in a bruschetta, with the added richness of the creamy fresh mozzarella and deep flavors of the balsamic glaze. You simply won't be able to eat just one, I guarantee it!
