Betutu is an Indonesian-Balinese dish of steamed or roasted chicken or duck in rich bumbu betutu (betutu spice mix). This highly seasoned and spiced dish is a popular dish in Bali and Lombok.

  1. Take 1/2 free range chicken (rub with salt and lime for 30 min)
  2. Make ready Blended spices
  3. Take 1 thumb of ginger
  4. Get 1 thumb of galangal
  5. Prepare Small pcs of turmeric
  6. Get 5 candlenut
  7. Prepare 3 pcs lemongrass
  8. Take 7 shallots
  9. Get 4 garlic cloves
  10. Get Oil
  11. Prepare Sugar
  12. Make ready Salt
  13. Prepare Roughly chopped spices
  14. Prepare 2 pcs lemongrass
  15. Get 5 bay leaves
  16. Prepare 3 lime leaves
  17. Get 3 shallots
  18. Make ready Additional
  19. Prepare Banana leaves for cover
  20. Take Aluminium foil

Season with salt and stir well. Ayam betutu is one of my all-time favourite dishes. Place the chicken into the bowl, and then mix well with ¾ of the spice paste and add the bay leaves. Another spices recipes from Bali, Gods Island.

Instructions to make Ayam Betutu (Chicken in Balinese spices):
  1. Blend all the blended spices
  2. Heat a pan, sauteé the blended spice until fragrant. Afterwards, bring the roughly chopped spices in until it's cooked.
  3. Rinse the chicken well, place it on the banana leaves, then rub it with the cooked spices. Wrap in the leaves and let it cool in the fridge for minimum an hour (better overnight).
  4. Next, wrap the banana leaves with aluminium foil and steam the chicken until it's tender (mine roughly 1 hour).

Place the chicken into the bowl, and then mix well with ¾ of the spice paste and add the bay leaves. Another spices recipes from Bali, Gods Island. This recipe was modified from my cookbook that I brought from Indonesia, Hidangan Ayam ala Resto by Sufi S. In that cookbook, I saw a recipe Bebek Betutu which Bebek means duck in bahasa Indonesia. I modified by using chicken instead.
