  6. Chop onion and saute in remaining oil.
  7. Combine beef stock, tomato paste, carrots and celery in pan
  8. return meet to pan and cover and lower heat to simmer
  9. Simmer for two (2) hours
  10. Serve over thick egg noodles, potatoes or rice
