Hello everybody, it’s Jim, welcome to my recipe page. Today, I will show you a way to prepare a special dish, short ribs. One of my favorites. For mine, I’m gonna make it a bit unique. This is gonna smell and look delicious.

Short ribs is one of the most popular of current trending foods on earth. It’s enjoyed by millions daily. It’s easy, it’s quick, it tastes delicious. Short ribs is something which I have loved my entire life. They are nice and they look wonderful.

To begin with this particular recipe, we must prepare a few ingredients. You can have short ribs using 17 ingredients and 6 steps. Here is how you can achieve it.

The ingredients needed to make Short ribs:
  1. Take 6 # beef short ribs (I use 4# short and 2# back)
  2. Get 1 tsp dried thyme
  3. Take 1 tsp salt, 1 tsp pepper
  4. Prepare 4-6 dried chilies
  5. Make ready 1 " knob fresh ginger root, smashed
  6. Make ready Beer hop:
  7. Take 1 fresh serrano chile, cut off stem
  8. Make ready 1/2 medium sweet onion, cut in small chunks
  9. Make ready 4 " fresh ginger root, peeled and sliced
  10. Prepare 1 tsp salt
  11. Take 1/4 C molasses
  12. Prepare 1/4 C brown sugar
  13. Get 1 bottle dark beer (I use Guiness)
  14. Make ready 2-3 Tbsp fresh chopped cilantro
  15. Get Zest and juice of 1 lime (2 tsp zest, 2 tsp juice)
  16. Get 2 Tbsp butter
  17. Make ready 2 Tbsp maple syrup
Steps to make Short ribs:
  1. Preheat oven to 325°
  2. Rub the ribs on both sides with S&P and thyme.
  3. In a large roasting pot, add 1/2C water, the chilies and sliced ginger. Put the seasoned ribs in the pot and cover tightly. Bake in oven for 2 1/2 - 3 hours.
  4. For the hop: In a food processor, combine the serrano chile, onion, smashed ginger and salt until smooth. Melt the butter in a large saute pan and add the onion mixture. Cook until caramelized. Now add the beer, molasses, brown sugar and maple syrup. Cook on simmer for 10 minutes until thickened. Add the cilantro, lime zest and juice.
  5. Raise the oven temperature to 450°. Brush the 'hop sauce' all over the ribs every 2 minutes until you have used it all; about 10 minutes. There should be a nice dark glaze on them.
  6. Serve with egg noodle pasta or rice. I also added sautéed mushrooms, red pepper strips and asparagus.
